What got you interested in
the science of food?
I was on a bus and there were three people
talking about the best way to lose weight.
One said the protein diet, one opted for
low fat, the other low carb. My scientific
learning told me not all of them could be
right. It turned out that none of them were.
I’m a bad person in that I could sur vive
perfectly happily 100 per cent of the time
on steamed vegies, soy beans and eggs.
Luckily my family does most of the cooking
and we enjoy a broad diet of all sorts of
things every day.
Rollmop herring. I love that stuff. It must
be my Swedish roots. On the day I got married
in Norway, it was best food day of my life.
We had herring for breakfast, fish for lunch
and fish for dinner. God, it was g ood.

What do you cook best?
Without a doubt, spaghetti bolognese. I
fry the meat then the onions, mix them
tog ether, add a whole bulb of garlic and
cook it in a huge pot for eight hours. We eat
some fresh and freeze the rest.
Early food memories?
Brown bread. My family emigrated from middle
Europe when I was young and I remember going
to school as a little wog kid with brown-bread
sandwiches when everyone else was eating white.
Mine had salami, theirs had Devon.
Tell us about your research for this book
As a doctor, my total education in nutrition
was eight hours out of a six-year uni course,
so I read the people who know their stuff. Not
the latest celebrities, but experts.
What’s next for Dr Karl?
I’m already diving into my next book but I’m
not sure what it’s about. Food and other things,
probably. Something will bubble up. S
